Vegan & Gluten Free Pancakes

These pancakes are suitable for Vegans and those avoiding dairy and gluten. These are very easy and quick to make plus can be stored in an airtight container for a few days should there be any left.

  • 1/2 cup gluten free self raising flour
  • 1 tsp baking powder
  • 1/2 cup dairy free milk (1 use gf oat milk)
  • 1 tsp chia seeds
  • 1 dstp honey or maple syrup


  • Mix the ingredients together until smooth, let sit for a few minutes to allow the chia seeds to activate.  
    Heat a small frying pan on a medium heat. Put a little sunflower oil or coconut oil in the pan. Pour in tablespoons of the mixture (you maybe able to do 3 little pancakes at a time) and allow to cook (you will see it set about 1 minute and then flip this over to cook on the other side) repeat until the mixture is gone.  
    You may want to add blueberries or raisins to the mixture or cinnamon or vanilla for variety or change or make a syrup from fruit or berries or serve with lemon or maple syrup.  Be creative and enjoy.
